Micheal Sparks brings years of experience to this event as both fashion designer and culinary entrepreneur who created an exquisite fine dining pop-up experience.

What is an Underground Restaurant?

Underground restaurants (or secret supper clubs) are social dining experiences run out of people's homes or other nontraditional locations, often without traditional restaurant regulations such as license requirements. Most hosts claim they do it purely out of passion for food; others may sell tickets and turn a profit.

Micheal Sparks, the chef who runs UGK in Richmond, chose its name to honor Harriet Tubman and her numerous efforts in aiding slave escapees through Harriet Tubman's Underground Railroad. Unbeknownst to him was its history of serving civil rights leaders and activists during the American Civil Rights movement.

Events offered by this supper club cost $125 per person and include wine pairings with every course, pre-dinner drinks, gratuity, and a take-home bag of snacks and beverages to take with them after their dining experience is completed. However, guests don't know where or who will cook until receiving an email several days before tickets go on sale.

Why is it so popular?

Secret dinners provide chefs with a creative way to showcase food without incurring the upfront expense associated with an official restaurant launch. Held in makeshift locations like homes or restaurants that generously lend out space after hours, secret dinners are advertised via social media and word-of-mouth to ensure maximum attendance; eager diners often line up outside before even seeing an invitation arrive!

Popularity of secret restaurants has given rise to a new type of kitchen: dark kitchens, cloud kitchens or virtual kitchens are facilities designed solely for food delivery services without dining areas.

One such business is UGK Community First of Richmond, which works in collaboration with local agencies to distribute meals during a pandemic. Micheal Sparks chose its name for its similarities to the Underground Railroad that allowed African slaves to escape to freedom.

Prices typically include food, drinks and gratuity - and some events even provide wine pairings with each course and pre-dinner snacks!

As these restaurants increase in popularity, local governments must find a regulatory system which will both allow their operation while protecting public safety and health. One potential solution could be "sharing economy models", where private companies match people looking to host meals with professional chefs.

What is the appeal of a Speakeasy Restaurant?

An allure of speakeasies lies in their special ambience; modern-day speakeasies provide diners with an exceptional dining experience and the chance to be part of history. Boasting secret passwords, hidden doors, and an air of exclusivity, they create an environment in which diners feel part of something exclusive while making for great social gathering spots or date spots.

At these events, menus vary and may feature unusual ingredients; one UGK dinner featured beaver tacos and cricket brie sushi while another featured deer meat, muskrat meat and snake meat! Michael notes that his group's aim is to highlight chefs from underserved populations such as women and minorities; Booth Hardy from Barrel Thief Wine Shop & Cafe provided wine pairing services at dinners while they also started an non-profit during Covid-19 pandemic to provide meals to those in need - hence their name "UGK," an acronym meaning Underground Kitchen to reference home dinner parties held by civil rights activists during civil Rights movement events during civil Rights movement times!
